are you sure you are generating videos (ie., .avi files) instead of Quake-demos (ie., .dm_* files)?

That's not the video file, it's demo file that you can only playback in Tremulous. If you want to somewhat convert it to video (.avi file), you have to play the demo in game (open console, type /demo Test if it's still in the directory you've found it) and once the map loads up type in the console /video. It will probably become laggy and slow, but the vid itself will be fine. Once you are taken back to the main menu screen, you will probably have to do /stopvideo. You will then find the big-ass file "video0000.avi" almost in the same place as the demo file, but instead of "demos/" it will be in "videos/" (or something similar).

This is how the output file will look like - http://www.youtube.com/watch?v=WkcQTwCZCXU

That doesn't do anything on my clients [pointless, does nothing], except get rid of the menu theme temporarily. I never did /video till the end of the demo in the original 1.1 client though.
@IamMegamanX: If you use tremfusion, there should be a menu called 'demos' with a play icon. Some other custom menus such as oticz also have the menu. (i actually dont recommend using his, if you uninstall it it screws up)
Also, remember to not click any button unless its the console key, otherwise you'll exit. This is somewhat edited in tremfusion client; you can press tab to view scores when it is recorded down.
