Don't modify data-1.1.0.pk3. Make new pack called for example z-guns.pk3 (z is to make sure it's loaded after all other) and put new stuff there. All standard data will be loaded from data-1.1.0.pk3 and custom guns from z-guns.pk3 so there shouldn't be any problems.

z-guns.pk3 should contain the same directory structure as data-1.1.0.pk3 but should *only* have your stuff in it. Put it in fs_homepath/base/  leaving data-1.1.0.pk3 untouched.

now type "/devmap atcs" in console, and the pk3 should take effect. Please note that this will only take effect when you create local servers as that pk3 will fail the pure check everywhere else.

What kind of mac it is shouldn't matter.

Say exactly what you did, and exactly how you know it doesn't work.

Well I followed your way. everything you said to do. I just archived data 1.1.0 to just edit the origional models Right. Then I dont touch it again. then I archive everything in that folder with trem and my edited models and I rename it to (z-guns) thats it. I put it into my base folder. Then I created my own server and I typed in the console what you said to type. It downt work.???????? :'(

Try the command /sv_pure 0 in the console before the /devmap

Don't modify data-1.1.0.pk3 AT ALL, that includes extracting and recompressing it. Create the same folder structure as in data-1.1.0, and put ONLY your own models in the right place, then zip it up and rename to .pk3. For example to replace the blaster model, you create 'models/weapons/blaster/' and put your own blaster.md3 in there, then compress the 'models' folder with the stuff inside it into 'whatever.zip', and rename to z-myblaster.pk3. Also you should try better English so others can understand you, and don't use the phrase "downt work", say what exactly is wrong, like "getting error <error here>" or "there is no difference, my models are not being used". Always check console for warnings and errors.

I think I've got the solution for the Mac users
Tremulous on Mac doesn't load other pk3 than data and maps
For get your own model or texture go in the folder where you have install tremulous and found the "base" folder and create an other folder next to him called "c...." to be sure it will working. Then copy and paste the data.pk3 in.
select the pk3 and read the informations and change "pk3" to "zip".
open and put all your models you want to use in the right directory. Compress into a zip, read the informations, "zip" to "pk3"
don't forget to delete the old pk3.
Now run tremulous and in the main menu, in the mod panel you will see your mod "c...." . Run it and load a custom server or find a unpure server.
Now enjoy.
